Food Story
From a very young age, Emma always had a deep appreciation for the food on her plate. This appreciation and adoration developed into a passion for food security when, during her undergraduate coursework, her professors stressed that adequate food was available in the global food system, yet widespread mortality occurred annually due to starvation or hunger-related illnesses. To further understand this, Emma undertook an internship with the Clemson Health Extension Diabetes Program and volunteered with the Clemson Veggie Rx Program. These opportunities transformed Emma’s perspective on hunger and poverty from localized challenges to an interdependent systemic issue affected by economic, social, and policy influences. As a result, Emma approaches public health nutrition and food security with an emphasis on sustainable, evidence-based solutions that target the fundamental determinants of hunger and poverty.
