Food Story

Nelson was born in a town that (at the time) was considered the “Apple Capital of the World” and was lucky enough to have access to amazing local produce that sparked her love of food from a young age. While she has always enjoyed cooking and experimenting with food, it wasn’t until Nelson started experiencing health issues in college that she began to recognize the power of food and its influence on our health and overall wellbeing. Throughout her studies and career, Nelson has become passionate about community-level nutrition, specifically around issues of food security and food sovereignty. Nelson takes any opportunity she can to travel and learn more about local cuisines, and she is forever in search of the perfect dairy-free ice cream.
