Food Story

Clausen grew up in a typical Midwestern “meat and potatoes” family. While she was always encouraged to help out in the family’s garden, prepare meals with her parents and even visit her aunt and uncle’s farm (from which they got all of their sweet corn and chicken), her interest in nutrition didn’t begin until she was in college where she started experiencing new foods like beets, brussel sprouts and black beans. She now enjoys learning about practically anything food related, from nutritional impacts on our microbiome to food systems.
